Vineyards
Ehlers Estate's Vineyardsare famed bio-dynamically by Winemaker and Vineyard Manager Rudy Zuidema. The biodynamic fanning system considers the forces, rhythms, and impulses of the entire universe. The goal of the practice is to achieve a balance between the physical and non-physical realms of our universe.
Vinfication
This wine is made from 87% mertot, 12% cabemet sauvignon and 1% (cabemetfranc)grapes. The pressed juice was aged for 14 months in 60% French oak and 40% American oak; 40% was new oak and 60% was two year's old. The wine was bottled on 5 January 2007.
Winemaker's Notes
Using merlot for the foundation, this wine has a supple texture and versatile acid profile. The cabernet sauvignon and cabemet franc add weight, omplexity, and depth. The end result is a harmonious marriage of black cherry, rhubarb, sweet tobacco, and minty mocha. Enjoy this delicious wine with beef, venison and lamb dishes, aged cheeses and chocolate.
